Roland shiitake mushrooms have good flavor but are thinner than namidodongkoo. This black to buff colored mushroom is one of the most commonly used mushrooms in mainland china.
Reconstitute Roland namikoshin by soaking it in salted water for 30 minutes and prepare just like fresh mushrooms. Remember to remove the stems. A crosscut into the top of the cap will allow thorough cooking of the thickest part.
