Eden Hiziki grows on rocky ledges along the coast of Japan. It needs much
sun and years to mature. Hiziki is washed and steamed for four hours and
sun dried. Eden selects the best grade. This grade has tiny, tight curls
that cook-up a shimmering black and accentuate any plate. Hiziki’s flavor
is best when lightly sauteed before boiling. Hiziki expands when soaked

To Prepare: Soak Hiziki for 15 minutes in warm water. Drain and rinse
well. Place in a small pan with enough water to cover. Boil, then simmer
15-20 minutes. It keeps very well, so prepare a quantity, refrigerate
and use during the week.
